Pumpkin Muffins

I've never been a huge fan of pumpkin/spice stuff, but I'm kinda starting to get into it. My sister-in-law gave me the recipe for these muffins and they're pretty yummy!!


INGREDIENTS

1 pkg spice cake mix
1 can (about 15 oz) pumpkin (not pie filling)
1 egg
A splash of water, if needed
1/2 cup (total) optional additions: Raisins, walnuts, chocolate chips or any combo


DIRECTIONS

Combine all ingredients in large bowl. Don't add too much water - batter should be thick.

Spoon into greased 12-cup muffin tin. The cups will be pretty full, but don't worry - the batter doesn't rise a lot.

Bake at 350
° for about 15 minutes. Don't overcook, muffins are always better a little moist in the middle!

Another twist on the pumpkin muffins... My girls love this! We call them Chocolate Muffins. They think they are getting yummy chocolate and I get to be happy they are getting a hefty serving a something good for them. All you need is one chocolate cake mix and one can of pumpkin (not the pie filling!). Mix the two together and bake in a muffin pan. Delicious and healthy! Be sure to mix with an electric mixer (ask Kim about this!). If you had been at the crop, you could have tasted them. Kim brought them as her snack! Did you know that can pumpkin is one of the few things that the canned version is more healthy than the fresh version? Yep, it has more vitamins and goodness in the one can than in a whole pumpkin! Enjoy!!
